Independent Speciality Coffee Shop to Open Soon in Cowbridge

Cowbridge's new independent coffee shop is set to open its doors this month.

Owners, John and Lee, spoke to Nub News about the plans for their store and what they hope to achieve from their opening.

John, who boasts an extensive background in commercial business, considers this an opportunity to turn his passion into a reality.

Lee who has 17 years experience from running a food driven pub, knows the demand a customer driven business creates.

John said, "I've always wanted to open a coffee shop since I was young and Lee is the same. We are both very passionate about creating a special environment for people.''

The name of the store, Ninety Six Degrees, comes from the optimum temperature used to brew coffee. Their hope is to provide speciality coffee that is crafted to perfection.

John and Lee believe the experience that customers have in the store is the key to their success.

They said: "Coffee brings people together: friends, colleagues, family. The fact we have a passion for coffee is great but it's also about bringing people together in that social aspect. We really want to create something special."

With a lot of competition in the coffee industry it is important for the company to have an edge. John says this will come from the environment they hope to create.

"As soon as you are in you are relaxed and when you leave we genuinely want you to feel better about your day."

Clifton Coffee is the supplier that 96 Degrees has paired up with.

John and Lee said: "we decided to use Clifton Coffee as our partner due to the full support they can offer us, from a wide range of products and equipment plus professional training for all our staff.

"They have many years of expertise and strong values in terms of teaming up with the local farmers and insuring that high quality beans are sourced in a sustainable way that is direct trade.

"Coffee is like wine, there is a grading and quality of bean, specialty coffee is scored on a rating above 80 to 100, all of the beans we source from Clifton is at 83 grading and above."

What about prices? The coffee will start from £2.65 and range up to £4 a cup for cold brew coffee.

The new shop's approach means that 96 Degrees will not be competing to be a home office for laptop users in Cowbridge. There will not be an electronic socket at every table and there will be a one hour restriction on their wifi. The goal here is play not work.

John and Lee said, ''we are trying to do is bring a social environment where people socialise with friends, family and colleagues. We want people to actually spend time with each other.''

And other products? They said: ''We are not cooking anything on site but our snacks, will all be home made. We are using local suppliers for all our snack food.

"We will be doing croissants, cakes and fresh bread with jams and stuff. We want simple, cosy food that accompanies your coffee.

"One of our key values is to support local, such as giving the used coffee ground to the local gardening centre, we used all local suppliers for the refurbishment of the shop."

The companies slogan, "What's your memory?'', is emblazoned across their feature wall.

''It is what the memory of the coffee represents for Lee and me," says John. "For me, there is an emotional attachment to it. Coffee reminds me of being on holiday.

"Day to day I am a big tea drinker but whenever I went on a summer holiday I would drink coffee. For Lee, it's about being at his nan's house. He would smell the fresh coffee.

''We want to bring those memories to the forefront of people's minds. The emotional and human part of the experience.

"We want to build on that. We want to take pictures when people find that memory. It's that personal thing."
